Horacio Rivadero

Executive Chef

"What can change your life is not your car or your bank account. It's what you eat every day."

I developed a passion for cooking as a child, watching my mom in the kitchen. At 14, I wanted to surprise my mom on Mother's Day, so I asked the head chef at the restaurant where I worked for help. I made pesto pasta using basil from her garden as a gift. It was my first homemade meal, and my mom loved it.

​

I enjoyed the restaurant environment, teamwork, and conversations over delicious food. I worked in various restaurants in Argentina before joining Ola Miami in the US. Under Chef Douglas Rodriguez's guidance, I learned to elevate the cultural dishes I grew up with. I led the kitchen of The Dining Room for 10 years and received recognition as the "Best Chef for the Gulf Region" by Food and Wine Magazine. Cooking is my passion and a form of meditation.

 

In 2013, we opened The District in Buena Vista, offering a menu that represents the diverse cultures of the Americas. This led to my nomination as a semifinalist for the James Beard Foundation awards in the same year.

In 2016, my wife Vero and I started working at Plant Food & Wine, a completely plant-based, gluten-free, and mostly raw restaurant. It transformed our cooking and our perspective on life. We changed our diet and discovered new techniques and creativity by working with farm-to-table vegetables. In 2022, Plant closed due to the pandemic, which prompted us to seek a new direction.

After a short break, we went to Chicago and partnered with a friend to open Bloom PBK, a recently nominated Michelin Bib Gourmand restaurant. Inspired by this experience, we returned to Miami to create something meaningful and help people with serious illnesses and dietary allergies. However, we didn't want to continue in the restaurant industry and desired a better quality of life. Many in the industry can relate to this feeling.

After much consideration, we took a leap of faith and started our own plant-based meal prep service. In November 2022, we began working on "New Seeds," focusing on culinary excellence, health consciousness, and accessibility for all.
